Raiding the pantry

Does anyone else just make up recipes on the regular? Sometimes I just want to experiment but most of the time I’m just running low on groceries and need to get to the store.

So yesterday was actually one of those days where I just wanted to experiement on making something fast, delicious, and healthy. Something I could make while “doing school” with my girls.

First I raided the pantry.  Here’s what I grabbed:

1 box of pasta

1 28 oz large can of diced tomatoes.

2 cloves of garlic

1 16 oz can of canelli beans

2 cups of broth (any kind you have handy)

1 cup of mozzarella cheese

Olive oil

Fresh basil & oregano from the garden

Parmesan cheese

Step 1:

Sauté the garlic in a little bit of olive oil over medium heat.  While the garlic is sautéing open the can of tomatoes and canelli bean.  Drain and rinse the beans.

Step 2:

Add the tomatoes, beans, and broth.

Step 3:

Bring to a boil.  Add pasta and cook for the amount of time indicated on package.

Step 4:

When noodles are done to your liking.  Remove from heat and add your fresh basil & oregano.  Stir in and serve!

Step 4:

Serve with cheese and enjoy!

This whole meal was made in under 20 min. with food that is usually found in any pantry. It was easy enough to make while schooling the girls.  The girls liked it so much they ate it for breakfast!
